The beef we choose to Custom Dry Age is the very best of sub-primals from the Prime Beef we receive. This highest level of quality is then held in a temperature and humidity-controlled environment for a period determined by our client’s required specifications. We only produce IMC Custom Dry Aged Beef in quantities defined by our customers. We do not Dry age on speculation of what we think we can sell. This ensures that you receive only product that meets your specifications. We will never deliver product that is over or under on drying time.

Our Natural Beef comes from programs that never ever use antibiotics or hormones in the raising of beef cattle. Meyer ranch is our primary source for natural beef. Our source for Wagyu Beef comes from Imperial Wagyu Beef. We choose Imperial because of their comprehensive view towards raising their Wagyu Beef. All cattle are holistically raised on sustainable family farms. Slow feeding for a minimum of 400 days on an all vegetarian diet on the farm and never ever receive added hormones or antibiotics.
