Wholesale Pork Back Ribs in Chicago

Pork back ribs — the baby backs — are the tender, meaty rib that anchors BBQ plates, rib platters, and appetizer menus across Chicago. They are smaller and more tender than spare ribs, with a natural curve that holds rub and sauce beautifully.

The cut

About this
cut

Back ribs come from the upper rib cage of the pig, specifically the section that connects to the spine. They are called baby backs because they are shorter than spare ribs — typically 3 to 6 inches long, with meat between and on top of the bones. The meat is leaner and more tender than spare ribs, and they cook faster, making them a favorite for restaurants that need a quicker turn on the smoker or grill.

We cut back ribs from premium pork, trimmed to your spec — the membrane on or off, the rack size you prefer, and the case count you need.

Frequently asked questions

What is the difference between baby back ribs and spare ribs?

Baby back ribs (back ribs) come from the upper rib cage near the spine — they are shorter, leaner, and more tender, and they cook faster. Spare ribs come from the lower rib cage and belly area — they are larger, meatier, and fattier, with a longer cook time. Both are excellent for BBQ.

Can you remove the membrane from back ribs?

Yes. We can peel the membrane (the silverskin on the bone side) before packing, or leave it on if you prefer to remove it yourself. Most BBQ accounts prefer the membrane off for better rub penetration and tenderness.

Do you sell back ribs by the rack or the case?

Both. We sell full racks, half racks, and case-packed bulk for high-volume BBQ programs. Tell us your weekly volume and we will set up a standing delivery schedule.
